These muffins are low-fat, cholesterol free and packed with carotenoids (the orange pigments in fruits and veggies that turn into vitamin A in your body). They are easy to make and perfect for a sweet treat or a twist on breakfast.

Serving Size: 2 mini-muffins - 2 grams fat, 91 calories, 1 gram protein, 0 mg cholesterol, 24 mg calcium, 161 mg sodium, 1 gram fiber

  • 1 box devils food cake
  • 1 15 oz. can pumpkin
  1. Spray muffin tins with non-stick cooking spray.
  2. In large bowl mix pumpkin and dry mix until all is moist.
  3. Fill each tin with about 2 Tbs of mixture.
  4. Bake 350 degrees for 10-17 minutes or until toothpick comes out clean.
  5. Remove from pan and place on wire rack.
  6. Optional: Dust with powdered sugar.

Saltine toffee is a delicious easy way to make the old fashioned treat. Another twist is to add a cup of chopped nuts such as pecans or walnuts.

  • 1 cup butter
  • 35 saltine crackers
  • 1 cup packed dark brown sugar
  • 12 oz. semi sweet chocolate chips
  1. Melt butter in a large saucepan.
  2. Line large baking sheet with waxed paper.  Brush paper with a small amount of butter.
  3. Line crackers on buttered parchment, touching with no overlap.
  4. Whisk brown sugar into remaining butter.  Set over medium heat.  Bring to boil and boil for 2 minutes.
  5. Pour mixture evenly over crackers.
  6. Bake at 400 degrees for about 10 minutes or until brown and bubbly.
  7. As soon as you take them out of the oven cover with chocolate chips.  Once melted (about 5 minutes) spread chocolate evenly over surface.  If using nuts, gently press into melted chocolate.
  8. Chill until firm, about 30 minutes
  9. Lift paper and place on cutting surface.  Cut into small bite size pieces.

Perfect for summer! It is a delicious creamy version of your favorite orange Jello.

  • 1 Lg. package Orange Jello
  • 1 can mandarin oranges (drained)
  • 1 cup orange pop
  • 1 small Cool Whip
  • 2 cup boiling water
  1. Add 2 cups boiling water to Jello
  2. Add 1 cup Orange pop
  3. Allow jello to partially set in refrigerator
  4. Mix Cool Whip and mandarin oranges into Jello
  5. Chill 2 hours

Sweet Crepe filling ideas (add sugar, cinnamon or vanilla to batter to make it sweeter): Apple Cinnamon: 1 tbsp butter, 1 apple chopped fine, a pinch of each cinnamon and nutmeg, and 1 tbsp powdered sugar. Cook until apple is soft. Banana and Nutella: Cook Banana in fry pan with butter, cinnamon, and honey until brown. Spread Nutella on crepe. Fill with bananas.

Savory Crepe filling ideas (add your favorite spices to batter): Spinach and Mushroom: Cook sliced mushrooms in pan until dark gray in color. Add spinach to pan and cook until wilted. Top with your favorite spices (try garlic, chives, etc.)

  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 2 Tbsp melted butter
  • 1 cup flour
  • pinch of salt
  1. Combine wet ingredients into medium sized bowl.
  2. Slowly add dry ingredients into mix.
  3. Heat a small lightly oiled fry pan over medium heat.
  4. Pour a 1/4 cup scoop of batter into pan and quickly swirl around until batter coats the entire pan.
  5. Cook for about 2 minutes or until crepe starts to pull away from the pan.
  6. Flip over and cook for 2 more minutes or until golden brown.
  7. Fill with your favorite savories or sweet foods.
