  • 1 ham bone
  • 1 carrot, sliced
  • 1 onion, diced
  • 12 oz. split peas
  • 2 cups cubed ham
  1. Add ham bone, carrots and celery to medium saucepan.  Cover with water.
  2. Boil soup until carrots are tender.
  3. Add split peas and ham
  4. Simmer 1 hour.
  5. Remove and discard ham bone.

  • 1/4 small head of cabbage, thinly sliced
  • 1/4 stick butter
  • pepper
  • 2 packages kielbasa
  • 1 jar sauerkraut
  1. Cook cabbage in medium saucepan with butter until tender.  Add pepper to taste.
  2. Cut kielbasa into 1/2 thick slices.  Add kielbasa to pan.
  3. Add drained sauerkraut to saucepan.
  4. Cover mixture with water.
  5. Simmer 1 hour.
  6. Drain and serve.

This is a delicious caesar dressing. My salads usually consist of romaine lettuce, black olives, mushrooms, and croutons. I also always add a little parmesan cheese because the vinegar can give this dressing a little kick!

I like to make this dressing on the spot and usually don't keep anchovies in the house so I have found an anchovie paste in the grocery store. It lasts for a while in the fridge. I usually just squirt 3 small blobs into the mixture.

  • 1/2 cup olive oil
  • 3 tsp red wine vinegar
  • 3 tsp worcestershire sauce
  • 3 cloves garlic, minced
  • 3 anchovies
  • juice of 1/2 a lemon
  • 3 Tbsp. mayonnaise
  1. Mix all ingredients into a food processor mix until well blended.
  2. Serve chilled.

This is a great low-fat alternative to pumpkin pie. I like to eat it with graham cracker crumbs and a dollop of whipped cream. Also, for an even lighter version use skim milk and sugar free pudding mix.

  • 1 package instant vanilla pudding
  • 1 cup canned pumpkin
  • 1 1/2 cups milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  1. Stir together dry pudding mix and spices.
  2. Stir in milk and whisk for one minute.
  3. Stir in pumpkin.
  4. Chill for one hour.
