This recipe makes a large amount of apple butter. When I made it it filled about 7 (1/2 pint) jars.

  • 12 medium apples
  • 1 cup apple cider
  • 1 cup sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 tsp cinnamon
  1. Peel, core and slice apples.
  2. Place apples and apple cider in crockpot. Cook on low for about 7 hours.
  3. Add sugar and spices and continue to cook on low for about 1 more hour.

  • 1 large eggplant, sliced
  • 1 egg
  • 1/8 cup lemon juice
  • 1 cup bread crumbs
  • 1/4 tsp parsley
  • 1/4 tsp basil
  • 1/4 tsp garlic powder
  • olive oil
  • 1 jar spaghetti sauce
  • shredded mozzarella
  1. In small bowl combine egg and lemon juice. Blend together.
  2. In another small bowl combine bread crumbs and spices.
  3. Place each slice of eggplant in the egg mixture and then in the bread crumbs mixture.
  4. Preheat oven to 350.
  5. Heat oil in large skillet over medium heat. Cook eggplant slices until brown on each side.
  6. Place the cooked slices on a cookie sheet. Top each slice with sauce and cheese.
  7. Bake for 15 minutes or until cheese is melted.

  • 1 package active dry yeast
  • 1 cup very warm water
  • 2 1/2 cups all-purpose flour
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 2 tsp white sugar
  1. In a small bowl, dissolve yeast in warm water.
  2. Let stand until creamy, about 10 minutes.
  3. In a large bowl combine all ingredients. Stir well until combined.
  4. Cover and let stand until doubled in size, about 30 minutes.
  5. Preheat oven to 350.
  6. Roll out dough onto a well floured surface. Form into pizza shape.
  7. Place a small amount of corn meal on cookie sheet to stop dough from sticking.
  8. Top with your favorite toppings.
  9. Bake about 20 minutes or until crust is golden brown.

  • 1 box yellow cake mix
  • 1/2 cup cooking oil
  • 1 cup canned pumpkin
  • 1/4 cup sugar
  • 1/4 cup water
  • 4 eggs
  • 1 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 1 can cream cheese frosting
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients well until smooth.
  3. Use baking cups or grease muffin pan, fill half full of batter.
  4. Bake for 30 minutes or until a toothpick inserted comes out clean.
  5. Remove from pan and let cool.
  6. When cool, top with cream cheese frosting.
