This is a perfect treat for 4th of July, just add blueberries and strawberries.

  • 1 pkg. white cake mix
  • 1/2 cup applesauce
  • 2 eggs
  • 2 cups Cool Whip
  • 2 cups fresh fruit, diced
  1. Preheat oven to 375 degrees.
  2. In a large bowl mix cake mix, applesauce, and eggs with a spoon until mix is moistened.
  3. Shape dough into one-inch balls and place on greased cookie sheet.
  4. Bake at 375 degrees for 8-9 minutes or until the edges are light golden brown.
  5. Cool one minute then remove from cookie sheet.
  6. When cool, frost with Cool Whip and cover with fruit.

  • 8 oz. cream cheese
  • 1 small container marshmallow cream
  • cinnamon
  • vanilla
  1. Mix together cream cheese and marshmallow cream until well blended.
  2. Add cinnamon and vanilla to taste.
  3. Garnish with cinnamon.

These are a delicious low-fat fall treat! They are a perfect snack or even a fancy appetizer. If serving as an appetizer I usually serve with a jam dipping sauce. Preparation for these is small but they do take quite a while in the oven. I usually just make them the night before.

  • 1 apple
  • 2 Tbsp sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  1. Preheat oven to 200
  2. Mix together sugar, cinnamon and nutmeg. Set aside.
  3. Core and slice the apple. (I use a mandolin to slice the apples. If you don't have one just slice them as thin as you can)
  4. Place apples on cookie sheet. Sprinkle with half of the sugar mixture.
  5. Bake for 1 hour and flip apples. Sprinkle other side with the rest of sugar mixture.
  6. Bake for about 45 more minutes.

These work with any tortillas but, if you want them to be close to the originals make sure you use corn tortillas. I also cut them into small strips as a tortilla soup topping.

  • corn tortilla chips
  • oil (I use canola)
  • salt
  1. While the tortillas are still whole, brush both sides with oil.
  2. Stacked oiled tortillas together and cut into triangles.
  3. lay out in a single layer on baking sheets. (may need to use more than one)
  4. sprinkle with salt.
  5. Bake for 15 minutes or until crispy. Watch them closely and rotate the trays to make sure they are evenly cooked.
