This is a delicious sweet treat as coffee cake or as a dessert. Another variation is to add nuts to it when you add the cinnamon sugar mixture.

  • 1 box yellow cake mix
  • 1 small instant vanilla pudding mix
  • 3/4 cup oil
  • 1 tsp vanilla
  • 4 eggs
  • 1 cup sugar
  • 2 Tbsp cinnamon
  • 1 can cake frosting
  • 1 tsp almond extract
  1. Preheat oven to 350
  2. Grease bundt pan
  3. Mix together cake mix, pudding mix, oil, vanilla and eggs.
  4. Mix together cinnamon and sugar in separate bowl
  5. Pour in 1/3 of the cake batter into the bundt pan.
  6. Sprinkle with cinnamon sugar mixture.
  7. Repeat. (Cinnamon sugar mixture should NOT be on the top of the cake)
  8. Bake at 350 for 50-55 minutes.
  9. Soften frosting for about 20 seconds in microwave. Mix together frosting and almond extract.
  10. Remove cake from bundt pan and drizzle with frosting.
  11. Let cool.

Adding mango to quacamole gives it a sweet taste. If you are looking to add a little more kick to it I suggest adding a jalapeno pepper.

When I make guacamole I also save the avocado pit to put back in the mix when I am done making it. It helps stop the avocado from browning.

  • 4 ripe avocados
  • 1 medium tomato, chopped
  • 1 mango, chopped
  • 1/3 cup onion, chopped
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • juice of 2 limes
  • a big bunch of cilantro
  1. Take the avocados out of shells and mash together.
  2. Combine all other ingredients.
  3. Chill.

Filling:

  • 6 medium stalks rhubarb chopped
  • 2 cups hulled and sliced strawberries
  • 1/2 granulated sugar

Topping:

  • 1 cup flour
  • 1/2 old fashioned rolled oats
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 unsalted butter, melted
  1. In square glass baking dish combine strawberries and rhubarb.
  2. Sprinkle with sugar.
  3. In small bowl combine all topping ingredients.
  4. Layer topping over fruit mixture in baking dish.
  5. Bake at 350 for 35-40 minutes or until top is crispy.

This a different twist on one of my favorite vegetables. Since I was heading to a summer bbq, I wanted to make something refreshing and cool. these would also be good with a little bit of onion, feta cheese or even pine nuts.

  • 1 lb asparagus
  • 4 Tbsp olive oil
  • 2 Tbsp dijon mustard
  • 1 Tbsp lemon juice
  • 1 tsp each basil, oregano, parsley and garlic powder
  • salt and pepper to taste
  1. In a large saucepan line the bottom with water. Bring water to boil. Add asparagus and boil. Heat until bright green or can easily be punctured with a fork. About 5 minutes.
  2. Toss asparagus in strainer and run cool water over until cool to touch.
  3. In a small bowl combine all other ingredients and whisk together.
  4. Combine and serve.
