This was a summer must have in my Dad's house growing up and also in ours! Refreshing and delicious.

  • 3 large tomatoes, sliced
  • 2 cloves garlic, minced
  • 1 jar Italian dressing (good seasonings works great!)
  1. Mix all ingredients together in a large bowl. Tomatoes should be completely submerged.
  2. Let sit at least 3 hours.

  • 1 pint grape or cherry tomatoes
  • 1 cup fresh mozzarella balls
  • 5 large basil leaves, diced
  • 2 Tbsp balsamic vinegar
  • 1 tsp olive oil (Wildtree basil pesto grapeseed oil works well)
  1. Mix all ingredients together.
  2. Serve chilled.

  • 3 large tomatoes, thickly sliced
  • 1 lb. buffalo mozzarella, thickly sliced
  • 2 bunches fresh basil
  • balsamic vinegar
  • olive oil or basil pesto grapeseed oil (Wildtree makes a delicious one)
  1. Place one piece of mozzarella, one basil leaf, and one tomato on top of each other.
  2. Place on plate and continue making multiple stacks until you run out of ingredients.
  3. Drizzle with oil and vinegar.

Rather than buy the pre-made pancake mix in the grocery store that is loaded with ingredients I make this and store it in an airtight container until I am ready for pancakes.

  • 5 cups all-purpose flour (I usually combine white and wheat flour)
  • 3 Tbsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 Tbsp sugar
  1. Mix all ingredients together and store in airtight container until ready to use

When ready to make pancakes:

  • 1 cup pre-made pancake mix
  • 1 egg
  • 1 cup milk
  • 1 Tbsp melted butter

  1. Combine all ingredients and mix well.
  2. Heat oil in skillet
  3. Cook each side in skillet until just golden
