This is a delicious quick dish that I will even throw in the oven for lunch. I like to change the toppings around sometimes. I will put sundried tomatoes, a couple different types of olives such as black or green. I also sometimes remove the fresh tomatoes and mushrooms depending on what I have in the fridge.

Serves: 1

  • 1 piece flatbread
  • 1 Tbsp sundried tomato pesto
  • 1 cup spinach
  • 1/4 cup chopped mushrooms
  • 1/2 small tomato, chopped
  • 6 diced kalamata olives
  • 2 Tbsp feta cheese
  1. Preheat oven to 350 degrees.
  2. Spread pesto on flatbread.
  3. Top with spinach.
  4. Top with the mushrooms, tomatoes, and olives.
  5. Cover with cheese
  6. Cook for 15 minutes or until spinach is wilted.

  • 1/4 cup mayonnaise
  • 1 tsp dill
  • 1/2 tsp garlic powder
  • 1 piece flat bread
  • 1 piece romaine lettuce
  • 3 oz. peeled shrimp
  • 1 hard boiled egg
  • 1/4 lemon
  1. Mix together mayo, dill, and garlic powder
  2. Spread mixture on flat bread.
  3. Top with lettuce, egg and shrimp.
  4. Squeeze lemon juice on top.

For garnish: Use small lemon slices or dill.

Serves 4

  • 1 8 oz. can black beans
  • 1/2 green pepper
  • 1/2 onion (cut into wedges)
  • 3 cloves garlic (peeled)
  • 1 egg
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp hot sauce
  • 1/2 cup bread crumbs
  1. Preheat oven to 375
  2. Mash black beans until thick and pasty
  3. In a food processor, chop pepper, onion and garlic. Add mixture to beans
  4. In small bowl stir together egg, chili powder, cumin and chili sauce.
  5. Add egg mixture to bean mixture.
  6. Mix in bread crumbs
  7. Divide into 4 patties
  8. Place patties in oven for 10 minutes. Flip over and bake for another 10 minutes.

  • 1 can garbanzo beans
  • 1 small onion finely chopped
  • 2 cloves garlic
  • 1 1/2 Tbsp chopped cilantro
  • 1 tsp dried parsley
  • 2 tsp ground cumin
  • 1/8 tsp turmeric
  • 1 cup dried bread crumbs
  1. Preheat oven to 350
  2. Mash garbanzo beans in large bowl
  3. Stir in all other ingredients.
  4. Knead mixture until well blended.
  5. Shape into 1 inch balls (If needed add a little bit of water)
  6. Bake at 375 about 20 minutes (until firm)
