Zucchini Bread

  • 1 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp baking powder
  • 1 cup sugar
  • 1 cup finely shredded zucchini, do not peel
  • 1 egg
  • 1/4 cup oil
  • 1/4 cup finely shredded lemon peel
  • 1/2 cup chopped walnut
  1. Preheat oven to 350
  2. Stir together four, cinnamon, baking soda, salt, nutmeg, and baking powder. Set aside.
  3. Beat together sugar, zucchini and egg. Add oil and lemon peel. Mix well.
  4. Stir flour mixture into zucchini mixture.
  5. Gently fold in chopped walnuts.
  6. Turn batter into a greased 8x4x2 inch loaf pan.
  7. Bake for 55-60 or until toothpick is clean.
  8. Cool 10 minutes and remove from pan. Cool on rack. Wrap in tin foil and store overnight before slicing.
